Spiedini Recipe. Italian appetizer.

Ingredients List:

This recipe makes 4 large servings

  • 12 slices of white bread (crusts cut off)

  • 4 whole eggs

  • 1-2 Tbs garlic paste

  • 1/4 Cup parmesan cheese

  • 8 slices of mozzarella cheese

  • 1/2 stick of butter

  • 1 Fresh lemon

  • 1 jar of capers

  • Natural wood toothpicks (20-30 approx)

  • Oil for frying (peanut is best, vegetable or canola - Not olive oil!)

  1. Prepare the Sandwich Layers:

    • Take three slices of crustless bread and two slices of mozzarella per sandwich.

    • Layer as follows: bread, cheese, bread, cheese, bread.

    • Ensure the cheese is fully tucked inside to prevent it from leaking out during frying.

  2. Secure the Sandwich:

    • Insert 5 or 6 natural wood toothpicks into the sandwich to hold it together while frying.

  3. Heat the Oil:

    • In a skillet, heat oil to medium-high (or deep-fryer to 365°F), ensuring there's a minimum of 1 inch of oil.

  4. Prepare the Batter:

    • In a medium bowl, beat the eggs.

    • Stir in minced garlic and grated parmesan cheese. Beat the eggs, & stir in the garlic & parmesan cheese in a medium bowl.

  5. Coat the Sandwich:

    • Dip the prepared sandwich into the batter, covering all sides thoroughly.

  6. Fry the Sandwich:

    • Skillet Method: Sear the sandwich on each side until golden brown, ensuring all sides are sealed and the center is cooked through.

    • Deep-Fryer Method: Deep-fry the sandwich until crispy and golden brown for the best results.

  7. Drain Excess Oil:

    • Remove the fried Spiedini from the oil and place it on paper towels to absorb excess oil.

  8. Finish and Serve:

    • Remove the toothpicks carefully.
